The rice is polished to the daiginjo level of 50% or below, and the sake is brewed entirely from rice without added distilled alcohol, producing a pure, expressive junmai daiginjo. The naturally grown rice contributes a clean, focused flavor with a subtle depth rooted in the health of the soil.
