Yamada Nishiki polished to an exceptional 35% and brewed using underground water from the Tenryu River basin, this daiginjo from Shizuoka Prefecture undergoes extended low-temperature fermentation following the Echigo brewing tradition, the only brewery in Shizuoka to use this lineage. Gentle ginjo aroma, warm rice umami, and a clean throat finish define this refined expression from Senju Brewery.
