Aichi-grown rice polished to 50% is at the core of this junmai ginjo from Yamazaki Limited Partnership in Nishio, Aichi, brewed under the Sonno label. The brewery uses contract-farmed Yume Sansui rice from Okumikawa and a soft water source from the Mikane sanroku foothills, with hand-crafted koji and precise fermentation management yielding a sake noted for its fragrant, gently sweet character with a clean dry finish.
