
Noguchi Naohiko, called the God of Sake Brewing, began his craft at sixteen in Noto, Ishikawa, and spent seven decades winning 27 Gold Medals at Japan's National Sake Appraisals and reviving both the ginjo boom and the yamahai brewing tradition. In 2017 he founded this Komatsu City institute to transmit his techniques to the next generation. The Premium Nouveau is the institute's first pressing of each new season, released muroka (unfiltered), nama (unpasteurized), genshu (undiluted), with no compromise on freshness or intensity. Vibrant and assertive, it opens with fresh green apple and citrus aromas, delivers a clean, piquant effervescence on the palate, and carries a youthful astringency unique to newly pressed sake.
