Nishinomon Daiginjo Namashu uses Yamada Nishiki polished to 40% at the Yoshinoya brewery in Nagano, near the ancient precincts of Zenkoji Temple. The brewery, founded in 1637, draws on Saigawa river basin spring water to produce a sake known for its elegant ginjo aroma and mellow, refined taste.
