Misasa Masamune Junmai Ginjo Koshu from Fujii Shuzo in the Misasa Onsen town of Tottori is a rare expression combining junmai ginjo-level rice quality with extended aging, producing a sake with the fruity ginjo aromatics deepened by the mellowed, amber-tinged character of koshu maturation. From the sole remaining brewery in Misasa, active since at least 1669, it represents a patient intersection of premium rice selection and Tottori's aged sake tradition.
