Brewed by Michizakura Shuzo in Higashikawa, Hokkaido, this junmai uses Wataribune, an ancient ancestor of Yamadanishiki rice revived in modern brewing. The result is a sake with depth and a satisfying umami-driven finish, balanced by the pristine alpine waters of the Daisetsuzan range.
