Kozuki (香月) Jungin Funabajikadori Nama is a direct-drawn, unpasteurized Junmai Ginjo from the pressing vessel at Daishinshu Shuzo in Nagano, polished to 50%. Jikadori (直取り) captures the freshest, most vivid tank character immediately after pressing, and this namazake release from the fully handcrafted brewery preserves the apple-like aroma of self-cultivated yeast fermentation in its most vibrant form.
