Kouki Hiden (香月 秘伝), meaning Kouki's secret recipe, is a Junmai Daiginjo using Kinmon Nishiki from Daishinshu Shuzo in Nagano. The Kouki (香月) label name and the secret recipe designation mark this as a special expression , Kinmon Nishiki, Nagano's heirloom sake rice, crafted with self-cultivated yeast and Northern Alps snowmelt water under the brewery's fully handcrafted philosophy.
