Kojin Junmai Daiginjo takes its name from the kanji meaning farmer or cultivator, honoring the rice growers behind Kobayashishuzo's premium Hokkaido production. As a Junmai Daiginjo, it uses highly polished rice without any added alcohol, expressing pure grain-derived fragrance and a silky texture. The cold Hokkaido brewing environment accentuates the delicate floral and fruity ginjo aromas.
