Kamotsuru Shitoujishikizake Junmaishu Shiboritate is a freshly pressed (shiboritate) junmai from Kamotsuru Shuzo Co., Ltd in Hiroshima, part of a four-seasons (shiki) series celebrating the cyclical rhythm of the brewing year. Released directly after pressing without aging or pasteurization, it captures the raw, immediate character of newly brewed sake, with Hiroshima's soft water lending the smooth, rounded texture the brewery is known for.
