Toyo Nishiki rice is used for this honjozo nama-chozoshu from Kamihei Shuzo in Tono, Iwate. Pasteurized once and stored raw before release, it retains a fresher, more vibrant character than twice-pasteurized sake, with the restrained added alcohol of honjozo contributing a clean, crisp finish.
