Kamenoishuzo in Kusu, Oita, a brewery of over 280 years, produces this junmai using locally sourced rice and soft spring water drawn from subterranean sources beneath the Kuju mountain range. The yamahai tradition is maintained alongside this pure-rice expression, which is recommended both chilled and warmed.
