Brewed with Yamada Nishiki polished to 50%, this junmai daiginjo from Yamagata's Yuza-machi uses Mount Chokai subsoil water and the brewery's exacting all-tokutei-meisho production approach. The sake shows a smooth, riverlike clarity on the palate and a composed, rice-forward richness.
