Junmai Daiginjo Kamenoo from Izuhonten Co. in Fukuoka combines the prestige of the daiginjo production method with Kamenoo, a rare heritage rice variety revived in the late 20th century. The rice is polished beyond the 50 percent threshold, and the result is a pure-rice sake with elegant structure and the subtle earthiness that Kamenoo is known to impart.
