This vintage daiginjo from Seiryo Shuzo is made with Yamada Nishiki at 35% polishing, bottled as muroka genshu (unfiltered, undiluted), and aged for several years at low temperature before release. Extended maturation in undiluted form deepens the sake's mellow umami and lends additional complexity to the refined daiginjo profile.
