Hizoginjo Sembazuru is a ginjo from Sato Shuzo in Oita, using Yamada Nishiki polished to 40%. Aged as a hizoginjo (treasured cellar ginjo), this low-polish expression develops additional depth and smoothness through careful maturation in the warm Kyushu climate.
