Hinodematsu, meaning 'pine tree of the rising sun,' is a sake from Matsuoka Shuzo, a brewery established in 1886 in Tsuchiyama-cho, Koka City, Shiga Prefecture, situated at a historic waypoint on the ancient Tokaido road between Kyoto and Edo. Shiga's position along the Suzuka mountain range provides clean, soft water from deep aquifers, and the region's long brewing history reflects the cultural importance of sake production along the old highway corridor.
