Tokubetsu junmai from Shimada Shuzo in Touon City, Ehime, brewed under a philosophy of creating sake that supports rather than overshadows food. Light, smooth, and extra-dry in style, it draws on the soft waters and Seto Inland Sea brewing traditions of the region.

주명 '고후지'는 창고에서 바라보이는 마쓰야마 앞바다의 고지마 섬 '이요노후지'에서 따온 이름입니다. 사케는 요리를 위한 술이라는 신념으로, 불필요한 단맛을 배제하고 탄탄한 감칠맛과 은은한 향을 가진 술을 목표로 합니다. 모든 공정을 자사에서 완결하며, 전통 사카부네로 정성껏 압착하고 한 병 한 병 단수 온탕으로 살균하는 빙간 처리를 거칩니다. 화려함을 추구하지 않고 존재감은 있되 너무 나서지 않는 '깊은 드라이 사케'를 지향하며 정진하고 있습니다.
