Gokyo Kikko uses Yamada Nishiki and Saito no Shizuku polished to 70%, brewed by Sakai Shuzo in Yamaguchi as a futsu-shu in the Gokyo tradition. Saito no Shizuku is a Yamaguchi-bred rice variety that contributes regional character to this everyday expression.
