A historical reconstruction sake, the Edonoshikomisaigen 'Asagisuisen' (Azure Daffodil) from Asahikawa Shuzo in Yamagata recreates an Edo-period brewing style using Miyama Nishiki polished to only 90%, retaining much of the rice bran for a full-bodied, rustic character very different from modern ginjo sake. This revival project connects the brewery's Bunsei-era heritage to contemporary brewing experimentation.
