Shinomine Doburoku Nama is an unpasteurized, raw doburoku from Chiyoshuzou in Gose City, Nara, one of few breweries licensed to produce this ancient unrefined sake style. With rice lees still suspended, this living beverage brewed with Katsuragi mountain water reflects the centuries-old Japanese farming culture that predates modern filtration.
