Shinomine Doburoku Hi is a pasteurized doburoku, the ancient unrefined sake style containing suspended rice lees, from Chiyoshuzou in Gose City, Nara. One of the few sake breweries licensed to produce doburoku, Chiyoshuzou under ex-winemaker Tetsuya Sakai creates this cloudy, rustic style using Mount Katsuragi spring water and a craftsman's attention to fermentation.
