Daimon Sokai (爽快) Junmai Daiginjo, meaning refreshingly clear, uses Yamada Nishiki from Daimon Brewery in Katano City, Osaka. Founded in 1826, this brewery applies ginjo brewing methods , tsukihaze koji, low-temperature long fermentation , to all products, and this expression achieves the crisp, bright character implied by its name with the soft spring water of the Ikoma mountains.
