Daimon Hojun (芳醇) Junmai Ginjo uses Yamada Nishiki in a rich, aromatic expression from Daimon Brewery in Katano City, Osaka. Hojun means richly fragrant, and this 1826-founded brewery's application of ginjo brewing methods to every product , tsukihaze koji, small batches, extended low-temperature fermentation , gives this Junmai Ginjo a concentrated, layered character with soft Ikoma spring water.
