Daimon Gold Prize Junmai Daiginjo has won award recognition for this Yamada Nishiki expression from Daimon Brewery in Katano City, Osaka. Founded in 1826, this brewery applies ginjo-method brewing , tsukihaze koji, low-temperature long fermentation, small batch control , to every product regardless of grade, using soft spring water from the Ikoma mountains for delicate, clean aromatics.
