Dai Shinshu Daiginjo is the premium non-junmai expression from Daishinshu Shuzo in Nagano, established in its current form in 1948. Fully handcrafted with in-house rice milling, self-cultivated yeast, and Northern Alps snowmelt well water, this daiginjo achieves the refined aromatics and structure that has won this Matsumoto-area brewery Kura Master 2024 Gold recognition.
