Abarejishi ('Wild Lion') is an ultra-dry (chokarakuchi) Tokubetsu Honjozo from Azumanofumoto Sake Brewery in Yamagata, polished to 60% and fermented to a boldly dry finish with minimal residual sugar. The Wild Lion name captures the assertive, forceful character of this sake, which contrasts with the brewery's more delicate ginjo expressions.
