Kurabito no Kokoro is a tribute to the artisans at Chiyonokame Shuzo in Ikazaki, Ehime, a brewery founded in 1716 that continues to grow Matsuyama Mii rice through contracted local farmers. Polished to 45% and fermented with EK-7 yeast for Ehime's signature lychee aroma, this Junmai Daiginjo reflects the dedication that has sustained this Shikoku brewery for three centuries.
