Asamai Shuzo applies the traditional kimoto brewing method to this Junmai, using Miyama Nishiki polished to 60% and naturally cultivated lactic acid bacteria to develop a fermentation starter that builds greater complexity. As a Junmai-exclusive brewery since 2011, Amanoto uses only locally sourced Akita rice grown within 5 kilometers of the Hiraka Town brewing site.
