Named Chiaki, this Junmai sake from Akishika Shuzou is brewed using organically grown rice from the brewery's own fields in Nose, Osaka, and reflects the brewery's long-standing practice of eliminating additives, charcoal filtration, and dilution from its entire lineup. Tasting notes describe aromas of rice and dark chocolate, with a dry, food-forward palate of roasted notes and a lingering finish, sake designed to accompany a meal rather than stand alone. The Chiaki line represents Akishika's approachable side without sacrificing the complexity that defines the brewery.
