Description

Akishika's flagship Junmai is the clearest expression of founder Hiroaki Oku's philosophy: grow the rice, brew the sake, and remove nothing. Using organically cultivated rice from the brewery's own 25-hectare fields in Nose, Osaka, the sake is pressed and bottled without charcoal filtration or dilution, delivering the concentrated umami and gentle bitterness that have made Akishika cult sake in Japan. The dry, textured palate reflects Oku's conviction that minimally polished Yamada Nishiki holds more character than heavily stripped grain.
