Released as a shinshunama, or first-of-spring unpasteurized sake, this junmai ginjo from Akishika Shuzo in Nose, Osaka marks the beginning of the new brewing season with a fresh, unfiltered expression. Akishika has produced exclusively junmai sake since 2004, growing its own organic rice and abandoning charcoal filtration to let each seasonal release reflect the direct character of the brewery's estate fields.
