Wagauji Yama no Itadaki est un junmai ginjo poli à 55 % à partir de Miyama Nishiki, commercialisé en hiyaoroshi après un stockage estival à la brasserie de Tsuruoka. Le vieillissement à basse température sur six mois adoucit l'acidité naturelle de la variété, intégrant la douceur et l'umami dans un sake d'automne arrondi et moelleux.
