Élaboré à 100% avec du 'Hitogokochi' cultivé dans les rizières en terrasses d'Inakura Tanada à Ueda, Shinshu. Ces rizières en altitude bénéficient d'un long ensoleillement, permettant de récolter un riz à sake aux gros grains séchés au soleil, idéal pour le brassage. La fermentation lente à basse température donne un sake au goût délicat.
