La brasserie fermente tous ses sakes avec de l'eau de source de montagne naturelle et une gestion traditionnelle de la temperature a portes ouvertes plutot qu'un controle climatique mecanique, canalisant le terroir du mont Seppiko dans chaque pressurage.
