Omachi Junmai Ginjo est un junmai ginjo monovariètal de Kamikokoro Shuzo KK à Okayama, brassé avec du riz Omachi, l'une des plus anciennes variétés de riz à sake encore en existence et étroitement associée à la préfecture d'Okayama où elle a vu le jour. L'Omachi est réputé pour produire des sakes d'une complexité terreuse profonde et d'un caractère riche et corsé qui diffère nettement des ginjos à base de Yamadanishiki, cette expression étant polie à 60% ou moins.
