Yamada Nishiki poli à 40% dans un daiginjo portant le nom de Mori Ogai, le célèbre romancier et médecin de l'ère Meiji né à Tsuwano. La brasserie, fondée en 1791 (Kansei 3) dans la ville château de Tsuwano, Shimane, puise dans un puits profond malgré le terrain en altitude et produit un sake réputé pour un goût plein et affirmé, adapté à une large gamme de cuisines.
