Shibottamanma no Denemon (搾ったまんまの伝衛門), qui signifie Denemon tel qu'il a été pressé, est un Junmai Ginjo genshu muroka non pasteurisé utilisant du Koshi Ibuki poli à 60 %, produit par Echigodenemon à Niigata City. Le brasseur solo Kato Hiroki, qui a relancé cette brasserie en 2021, capture le caractère brut et non transformé de sa fermentation inspirée du kimoto dans cette expression directe et vibrante.
