Le brasseur solo Kato Hiroki, qui a relancé cette brasserie en 2021, applique une approche de style kimoto et recherche délibérément une astringence et une acidité intentionnelles qui diffèrent du style conventionnel léger et sec de Niigata, produisant un daiginjo d'une complexité texturale inhabituelle.
