La méthode traditionnelle kimoto, dans laquelle des bactéries lactiques naturelles cultivent le démarreur de levure sans ajouts artificiels, constitue la base de ce junmai ginjo d'une brasserie de Saitama entièrement dédiée au sake de riz pur depuis 1987. Un minimum de trois ans de vieillissement avant mise en vente permet au sake de développer un umami en couches et une finale propre et persistante.
