Ce Junmai Ginjo est élaboré avec le riz à sake Kami no Ho de la préfecture de Mie, en utilisant la levure WK-67 également développée à Mie. Le sake fraîchement pressé est immédiatement pasteurisé une seule fois, mis en bouteille puis conservé à des températures sous zéro, offrant une expérience haut de gamme sous le nom de Gizaemon.
