Le Yamada Nishiki constitue la base de ce namagenshu junmai ginjo d'Uehara Shuzo à Shiga, brassé sans pasteurisation ni dilution et pressé selon la célèbre méthode kioke tenbin (balance à cuve en bois) de la brasserie, une technique conservée par moins de six brasseries au Japon. La levure sauvage cultivée en interne et la tradition yamahai de la brasserie confèrent au sake son corps plein caractéristique et sa fraîcheur vive.
