Emishiki Junmai Daiginjo Yamada Nishiki utilise le roi du riz à sake poli à 50 %, d'Emishiki Shuzo à Koka City, Shiga. Fondée en 1892, cette brasserie sous la direction de Takeshima Mitsuyoshi de la 5e génération n'utilise ni alcool de brassage, ni enzymes, ni accélérateurs de fermentation, s'appuyant sur des ferments de style kimoto et une presse traditionnelle à panier sase-shiki avec 100 % de Yamada Nishiki cultivé sous contrat à Shiga.
