How to make it
Thinly slice the Japanese green onion on a diagonal. Place it in a bowl with the dashi powder and let it sit for about 5 minutes until slightly softened. Add the flour, potato starch, water, and egg, then mix well until the batter becomes slightly sticky.


Heat the oil in a frying pan over medium to low heat. Spread the batter into a round pancake and cook for about 5 to 6 minutes, flipping once, until both sides are golden brown and the center is fully cooked.


Transfer to a serving plate and finish with okonomiyaki sauce, Japanese mayonnaise, bonito flakes, and sliced green onions. Serve immediately while hot.
