Para extraer una calidad superior y un aroma ginjo más intenso que el del junmai ginjo convencional, el sake crudo preparado en invierno se redujo lo menos posible bajo congelación a 5 grados, y la botella se llenó tras el calentamiento. Luego se envejeció con esmero en una gran nevera a 5 grados antes de su expedición.
