El arroz Kyo no Kagayaki pulido al 60 % y embotellado como genshu a 17-18 % de alcohol otorga a este Tokubetsu Junmai su carácter audaz y ultra seco, con un SMV de +16 que lo sitúa firmemente en la categoría cho-karakuchi. Ganador de la medalla de oro en el Milano Sake Challenge 2019 y de medallas de oro en competiciones en Singapur y Tokio, se elabora con fermentación completa para desarrollar la sequedad preservando la riqueza del sake sin diluir. El agua de manantial Shiragiku de Fushimi sustenta tanto el final firme y cortante como la profundidad de sabor subyacente.
