Shinsei Iwai Junmai Daiginjo utiliza el célebre arroz Iwai de Kioto, una variedad de sake registrada en 1951 y cultivable únicamente en la prefectura de Kioto, pulida para una expresión junmai daiginjo de esta histórica cervecería de Fushimi. Los grandes granos del Iwai, con prominentes centros blancos, son adecuados para la elaboración con alto grado de pulido, y el sake resultante exhibe frescura afrutada junto al umami natural del arroz. Elaborado con el suave agua de manantial Shiragiku de Fushimi, obtuvo el oro consecutivo en el Kura Master en la división junmai daiginjo.
