Homare Fuji, el arroz de sake emblemático de Shizuoka, se pule al 55 % y se fermenta lentamente a baja temperatura antes de una única pasteurización por calor. El resultado es un ginjo tranquilo y armonioso con la comida, con un umami de arroz delicado, acidez moderada y un final limpio, extraído del agua subterránea blanda de la cuenca de Kikugawa.
