Kikubijin elabora sake desde mediados de la era Edo, bajo los dones de la llanura de Chikugo. Esta destilería está vinculada al poeta Hakushu Kitahara, cuya cuñada era originaria del vecindario, y el sake que él amaba se ha hecho célebre. Los caracteres del nombre Kiku Bijin fueron incluso caligrafíados por el propio Hakushu.
